Snow Day!!!





Yesterday was a snow day and I don't know about you but the boys love a good snow day. Ian is in Kindergarten so he gets a real snow day unlike my little Leland. Leland loves the snow days because he gets an extra day with his big brother! Not to mention when it's a snow day for schools, it's a snow day for Rob. He works at the local university so they also tend to shut down when the weather gets bad.

 The boys LOVE it when they get go sledding!

Did a little prep work before they could sit down for a little afternoon snack.
 

After a cheese stick, some water and nice juicy red apple, it was time to head home some warm soup!



Ready, Set, GO!!!



 
Once the boys came in form the cold we sat by the fire for awhile and I pulled out a jar of dry soup that I keep on hand. Today I went with Rice & Lentil Soup.

I found this recipe a while ago on All Recipes.com
I LOVE this site because it's a great way to get some new recipes and I love that people comment and add suggestions. I find them very helpful when you might want to add something more. You can almost always find someone that has tried it already so they can tell you if it worked.

This is a super simple way to keep a dry soup on hand for a cold day or for a quick dinner. All you are going to do is layer all ingredients in a a pint size jar starting with the first item listed. My photo shows everything mixed up because the boys like to shake them up once they are made.

They also make great homemade gifts too!



2 Tbsp chicken bouillon granules
1/3 C lentils
1 Tbsp dried parsley
1/2 tsp ground black pepper
1 tsp poultry seasoning
1/3 C uncooked converted rice ( I used minute rice)
1/3 C lentils (sometimes I used split peas)





Then when you cook it, add 8-10 cups of water & 2 tsp butter.
Bring water and butter to a boil then add ingredients from jar. Cook for about 30 minutes or until lentils are tender. I added carrots this time but the recipe says you can add chicken and celery. Really you could add anything you have on hand. Click for full recipe.

Then I found this SUPER CUTE! idea on Pinterest of course! It was a tutorial on cutting carrots in the shape of hearts. Mine did NOT turn out as cute but the boys thought they were fun.




I added them to a great soup that even the boys love. I found it at all recipes. I change it up a little. I don't put as much pepper in because it gets a little to spicy for the boys. I also take a Sunday and make up a bunch of jars and leave them in the cupboard for a cold day.
